Rat feces and other nasty things have been found in envelope glue. Use a glue moistener instead!

A little rat feces keeps our evolutionary immune system sharp. That being said, I will put a few drops of water on my finger, dab the envelope glue, then wash my hands.

I don't know about the first part, but the second part sounds like a plan to me. I actually put some water on my finger from the envelope moistener, and then dab. Sometimes if you apply it directly to the envelope, you get too much moisture.
