What was the last meal you cooked yourself?


I mean actually took ingredients and made something, rather than just getting something from the freezer and heating up.

I've just made a veggie bake consisting of ;
sweet potato
Leek
Red onion
Green pepper
Carrots
Spinach
Cauly and broccoli mix.
Mixed herbs, salt and pepper, a few knobs of butter and a drizzle of olive oil.
Covered and baked for 40 mins.
Uncovered then topped with mozzarella and tomatoes and baked again for 20 mins. (At this point I'd usually beat a few eggs and tip it over and put back in to bake, but i have none today).
Served with a dinner roll.

I'm stuffed, it was great.

Sounds wonderful. I lament I always assumed my life would mellow into a gentrified elegance wherein I would happily create healthy meals for myself and SO but alas, this has not been the case.
When are you inviting me over? I'll bring the eggs.

Yesterday I had some delicious butternut squash ravioli with bolognese sauce. While not from the freezer they were still store bought and in the fridge.

The last thing made with raw ingredients would have been a lowly hamburger. Still, better than a fast food burger or the burgers in most restaurants.

Spinach & ricotta perogies with asparagus and mushrooms seasoned in Italian seasoning and garlic.

I'm not a big fan of spinach or mushrooms, but I would definitely eat that! Sounds yummy.

Salmon with quinoa, broccoli, and cauliflower. Chocolate pudding for me and my daughter.

I made a shrimp chowder yesterday. I usually make all my meals from as scratch as I can. I do batch cook though as most of the time it's just me, so a lot of my meals come from the freezer, but I did make it.

That sounds good. I have some shrimp in the freezer now that I’m thinking of defrosting.

I put corn, celery, carrots, and potatoes in it as well. It was pretty yummy.

Yes I do this alot too. Saves time and tastes better than anything I can in the frozen section πŸ‘

That's a yummy spinach pie that's of Greek origin. The recipe and look of it reminds me of quiche, which in itself is delicious, so I think Spanakopita is also tasty.

I made Chili-Mac just last night :). (Some call it Taco Casserole). It consists of:

- 1 box of macaroni and cheese
- 1 lb. of ground beef
- 4 small cans of tomato sauce (2 medium cans work too)
- half a packet of taco seasoning

For additional nutrients (which were served in separate containers) I included green beans, and mixed Mandarin oranges with peaches. We all drank 1 cup of skim milk, save for me, I only drink half a cup.
