Movie theater popcorn


Why does it taste so much better than the one you make at home?

They pop it with a flavored, colored ultra hydrogenated grease substance. It used to be palm and coconut.
That's why it's so yellow, too.
This is even before you pump the fake butter flavor on it... this is the actual popping oil.

Didn't theatres, at one time, use actual melted butter instead of the yellow greasy gook they use now?

I'm not a fan of movie theatre popcorn, mostly because of the yellow grease. The only thing better about it than home-popped, IMO, is somehow the popped kernels are bigger and fluffier than I could ever get them.

Well I worked in chain theaters in the 80s and it was still fake butter flavoring back then.
Independant artsy theaters served real butter. There was a theater in San Francisco in the 80s that was all couches and they served real buttered popcorn in wooden salad bowls. The Red Victorian on Haight street.
But mainstream theaters have been using fake butter for pretty much my lifetime, I suppose if you go back far enough it might have been real butter.

The benefit of the fake butter flavoring is you can store it at room temperature when it's not being heated in the pump dispenser. It can be heated, cooled off, heated again, cooled off again, over and over again, and it does not break down or go bad. It stays liquid even when it's cold.
Real butter is a lot of extra work, you have to refrigerate it at night and then melt it each day. If you let it cool off in the pump dispenser, it hardens in the tubes and clogs it up.

The Red Victorian sounds great. We had several art house indie theatres where I grew up. That must be what I'm thinking of vis a vis the real butter.

I can understand the benefits of the yellow grease, but never could stand the taste or consistency of it.

I agree, when I make popcorn at home (in a pot on the stove, NOT microwave) I use a bit of real butter to top it off, but I don't cover the whole thing in butter. I start with some olive oil Pam spray just to help the salt stick and to give a little flavor, and then a small chunk of real melted butter. Of course it's better with a whole stick of butter, but I don't want to eat a stick of butter in a day. lol

The Red Vic was awesome in the 80s. they had a really eclectic programmer, so it was a mix of old movies, new art releases, student film finals festivals, cult favorites, just really cool. Then they had to move to a new location down the street and the fire dept made them get rid of the all-thrift store-couches seating. It lost some of it's Haight street hippie mojo.

Can you get the kernels to pop as big and fluffy at home as they can at the theatres? That's my only objection to home-made popcorn. I don't do microwave popcorn either.

Oh great, now I'm craving (real) buttered popcorn!

The Red Vic sounds great, much like the art theatres we had as far as programming and the rest, except no couches, just regular theatre seats. I'd prefer the thrift shop couches.

It used to be really fun to go with a group of friends and get your favorite couch.

I get the popcorn pretty big at home on the stove. You just have to keep shaking it so it doesn't burn.

Sounds like fun. I loved the indies in my neck of the woods, even though they didn't have couches.

I've tried shaking the pan (burning, or even close to it is no good) but still have never managed to get the popcorn as big and fluffy as theatre popcorn.

My two cents here folks, no facts. Movie theater popcorn is a lot like the popcorn they make at my bar. They got the big glass box and the whole deal. It's not good fresh. Fresh tastes like it came right out of a microwave bag or a frying pan. It sits in hot lights for a bit, 20 minutes at least. Then it gets doused in the butter. That's the magic. You gotta make it. Keep it warm a while. Let it sit like a good beef roast. THEN you serve it.

That is totally different from how theaters do it.
Theater popcorn is best when it's right from the popper, and they do not butter it at all until it's ordered, then they butter just that tub. (or else there are self-serve butter dispensers, it depends on the theater)
It keeps fresh longer unbuttered, that is why they only butter it right before selling. They would never pre-butter a whole batch. It just looks buttery right out of the popper because the popping oil has yellow color and flavoring in it.

Oh I didn't mean pre-butter if it worded that way. I just meant it ain't fresh. And I ain't ever had fresh popcorn in a theater. It's always been sitting there hours. The best theater I ever went to let you butter your own popcorn. That was amazeballs.

The way to go, is find where they are actively popping it, and ask for a tub scooped directly from that fresh stuff. They usually have the big glass bins filled up and that might be anywhere from hours to DAYS old, and I never buy that. I don't get the pre-filled tubs or bags. I only get popcorn if I see that popper going, and I only get the stuff that JUST came out of the popper.
When I worked at theaters, I got spoiled by the freshest stuff and it is hands down the best.
And on a slow weekday during the matinees, we did not continually pop, we would make a batch when we opened and then only pop more when it was getting low. So the busy times are more likely to have fresh stuff available, but you still have to ask them to scoop it directly from the popper.
It can also be hard to keep track of the popper at a super busy time, when all the kids are busy helping people it's more likely to burn if you don't dump it IMMEDIATELY after the popping stops , so some theaters will only pop during the lulls between rushes, and then turn off the popper during the rush.

The theater I go to the most now lets you pump your own (fake) butter, so then you can layer it. Dump half the popcorn into a carrying tray, butter the lower tier in the tub, then put the rest back in the tub and butter that.
That theater also has a BAR. Now that is a modern upgrade I can get behind! Cocktails and Imax, yes please!

It's probably a subliminal connection people make with the experience of being at a theater. Otherwise they'd sell $8.00 portions at the grocery store

Yes that what I was thinking when I went to the theater last week. Maybe it tastes so good because of getting it ready made and that combined with the whole experience of going to the movies, it's always sort of magical, lol. I Usually never buy popcorn when I go to the movies because it's so expensive, but last week when I was sitting in the lobby waiting for Life to start I watched the lady pouring fresh popcorn into the boxes and then the smell drifted into to my nose, so I decided to go a little crazy and bought me a box, needless to say it was delicious. I don't really even like microwave popcorn or the one you make on a stove. I'm more of a peanut guy. Chili peanuts are the best!

Probably picks up the body odor of all around it and the theater odor 😌
I have found that the store Target tastes similar.

Artificial cheese. They make those in labs to make sure it appeals to all tastebuds. Think about fast food giants and all other fake crap they put in our food, they have companies that spend thousands of $ on scientists to make just the right flavor. You would never know that that piece of bread you are eating, should not be tasting like blueberry. Oh wait, just mix yellow 6 and blue 45 and you get a fruit roll up.

I think it's not even just the taste, but is partly psychological. The taste is good, but it's also a taste unique to movie theaters. Most people enjoy going to the movie theater and I think they psychologically associate the taste with that. Movie theater popcorn comes with going out, usually with other people, watching a movie on the big screen, which is different from watching something on your TV or computer at home on your couch as you can do every day. It's partly the experience. That's my theory.
