It gave Thanos the gauntlet back, but it also showed Thanos that he was in danger of losing the fight.
That raised the stakes enough so that Strange could demand, and Thanos would have to agree, that Stark be allowed to live.
Without the near-miss, Thanos might have been too cocky to bargain with Strange for Stark's life.
On the other hand, if Quill had kept his cool, Thanos could've eventually gotten the gauntlet back. If not on Titan, then somewhere else decades later.
In other words, I like to think that Dr. Strange looked ahead for the one path that leads to a final, decisive victory against Thanos.
Thanos won largely due to the Avengers' own hubris and stupidity. Thor could have aimed for the head, but he wanted to gloat. etc etc
