Eggs are supposed to represent renewal of life. Since it's believed that Jesus was resurrected, (renewed) three days after dying, Easter eggs symbolise that for Christians.

At least, that's what I've heard.

It actually is a practice that predates Christianity by a bit. The Christian Church often adopted and encouraged other religious practices to indoctrinate other religions into the Christian faith. It's the same reason Christmas is December 25, even though that isn't the day they think Christ was born on, but it helped pagan religions transition to Christianity.
