The Answer to this question is literally as simple and OBVIOUS as can be....

^^Answer...

Disney's "Live Action Reimaginings"....are Box office Monsters!...

the real answer is, The Jungle Book and Beauty and The Beast....

The Lion King Will Literally Be the Biggest one of them all...

The Lion King is Probably going to be turned into a Trilogy of Live action films once The first one Dominates...

IMO The Lion King Is going to open over 200 Million and Make between 1.3 to 1.5 Billion dollars...It Will Be A PHENOM...

Disney has struck gold With These "Live Action Reimaginings"...

They are averaging over 700 Million dollars per film and all have the potential to have sequels and trilogies...

Basically The "Live Action Reimaginings" have become a franchise no different from The Marvel Cinematic Universe or Star Wars...

Disney is makes 2 or 3 of them a year now because They all are dominating Box Office...

The Lion King is arguably the most beloved animated film ever...It Made Almost 1 Billion 25 years...

The Second The Jungle Book made 1 Billion and They Knew they could get the same director on to direct The Lion King, the question of "Why" literally becomes the Stupidest Question ever asked....

The Lion King with Jon Favreau directing after Proving what he did with The Jungle Book is a Guaranteed 1 Billion + film with the potential to make over 1.5 B+

basically asking Why?

is like Asking Why make another Avengers film Or Why Make Avatar 2?

The Answer is because The films are guaranteed 1 Billion + Box office monsters...

What is Disney vault system?

How often do Disney movies come out of the vault? Usually, the movies in Disney vault will be kept for about 7 years. According to Disney’s declaration, the reasons behind the Disney vault mainly lies in that every seven years a new generation of 2 – 7 year old children comes of age and is ready to enjoy the films. But others believe that the reason behind Disney vault is that Disney would like to create a scarcity which may encourage people to buy more DVDs and Blu-rays before they are putting on the Disney vault list. Many classic movies are on the Disney vault including Snow White and the Seven Dwarfs, Pinocchio, Fantasia, Dumbo, Bambi, Cinderella, Alice in Wonderland, Peter Pan, Lady and the Tramp, Sleeping Beauty and so on.
With the vast numbers in what makes up a theatrical audience, a DVD audience and a streaming audience Disney is in tune with the changing tastes of those audiences globally. Some have never seen a Disney film before especially after every 7 year period.

Disney has legacy products that may not age nostalgically well and a theatrical reissue wouldn't suffice. 3D only went so far for certain titles and appetites.

"Why not" as you said to the OP is the perfect response. I am a fan of The Lion King and the DVD, the remastered Blu-Ray, the 3D version and have seen the Broadway play in multiple cities and they were all outstanding entertainment.

Why not make this product constantly available to new audiences?

There is always a new and next generation of kids and parents ready to share their fondest memories and make new memories.

Lion King will do huge numbers, Dumbo will be decent too. But I don't think Aladdin will do all that great, Asian markets will make its international profits significantly better but domestically? Will Smith is not that big of a draw any more.
