jewish is a religion. She doesn't belive in God so how can she be jewish?

"Jewish" is not just a religion, it's an ethnicity as well. (Some might call it a "race")

She's about as Jew as Jew can get. A lot of Jews nowadays are atheists, or at best, agnostic.

She's Ashkenazi which is usually just called "Jewish". There are plenty of Jewish atheists.
