Will Tom Holland's version of Spider-Man ever get the symbiote or fight Doc Ock again in a future Spider-Man movie?

I sure hope so. I love the symbiote storyline and I'd love to see done justice in the Holland movies. Also, Doc Ock is my favorite Spider-Man villain, so I'd like to see another cinematic take on him and I will see any Spider-Man movie in theaters with as him the main villain.

With Disney letting Sony make the upcoming Venom and Morbious movies to be set in the MCU, the symbiote probably is not likely to be attaching itself to Peter. I am fine with that. Frankly I do not want Eddie Brock to be Peter's childhood friend in the MCU.

That would be cool. But it's hard to see how they'd top Alfred Molina.

Molina looked the part, but his Dr. Octopus was much too sympathetic and heroic. I'd love to see a take on Doc Ock that is much closer to the figure of absolute danger and evil that we have in the comics. And yes, I know the comic book Ock has had his moments of humanity, but over the course of his near-60 year existence he's primarily been a sociopathic megalomaniac, not someone who'd sacrifice his life to fix his mistake and save the city.

An actor I've always felt is underrated, and who I think could handle the part, is Oliver Platt.

I hope so.
