I have a few questions...

Why did that henchmen put Nebula back together? And why did she still have full control of her body in a prison she escaped without breaking a sweat?

What was the reason for living the maker of the gauntlet alive?

I don't quite understand the second part of your first question, but I assume she was put back together because Thanos got what he wanted from dissecting her. She's his daughter, after all.

As for Eitri, I believe Thanos left him alive because he operates by a code of honor. He may have threatened him with death if he didn't forge the gauntlet, but promised to let him live if he did so.

I had a feeling she put herself back together...

Supposing she managed to put herself back together (and did it very quickly), there’s the likelihood that Thanos ordered to have her reassembled. Thanos has never had a problem putting Nebula through brutal torture, but even so he might still care about his daughter... in his own deranged way. Or does he? After all, he warned Gamora that she’d better be right about the Stone otherwise her sister would pay. (I think if she wasn’t put back after a while, she would’ve perished.) Keeping her intact was obviously risky, but it seems like whatever the henchman was doing - right before Nebula was able to distract him - was preventing her from regaining full control.

As I see it, after Gamora was forced to reveal to Thanos the whereabouts of the Soul Stone, the Mad Titan became too concerned with obtaining the stone that he maybe wasn’t the least bit worried about Nebula escaping. With that in mind, how did Nebula escape and avoid running into trouble? Let’s not forget that she’s very powerful; she wouldn’t have difficulty taking down some of Thanos’ goons.

In Eitri’s case, the gauntlet maker, one of the reasons Thanos spared him was potentially to leave him... with nothing to live for. Thanos made a promise to Eitri that he was going to leave him and his race of Dwarves alone if he would build an Infinity Gauntlet for him. Unfortunately for Eitri, Thanos went back on his word and had Eitri’s entire race killed. To add insult to injury, Thanos had the maker’s hands ruined (to put it mildly).
