How did she escape on the motorcycle/dirt bike with one arm?

If she doesn't have a left arm, she can't operate the clutch. Therefore can't put it in gear or shift gears.

How did she operate the motorcycle to get away?

One of the worst parts of the movie, along with the No Battle of 40 days.

I haven’t seen the movie, so I can’t speak to the realism of the scene itself, but you can definitely get around on a motorcycle without a clutch.
Getting started will be the biggest challenge (particularly with only one arm), but once you’re rolling, clutchless shifting is simple on most motorcycles.

It was a dirt bike in sand. I get that double clutching is an option, but given the context of the scene and the escape with hills and deep sand and pursuit, I just can't see how it could work.

Maybe the bike was clutchless with no gears.
