When Sacha pranks people, why doesn't he instantly reveal it's a prank, like Jackass?

I think mostly because it's not his style - the format of the show is different.

It's also probably related to the point: Jackass' point is to prank people (I think - I haven't seen it). It's mostly just for laughs and being silly or outrageous. Cohen's point is often a social or political one. He's trying to highlight the mentality of people. To that end, he doesn't need a "we gotcha!" section at the end, because that would change the impact from, "Look in the mirror, everybody," to, "April Fools!"

Finally, depending on the prank, some of these things might get him killed. His crew have been afraid for his life several times, so to take that embarrassment up a notch to "we're going to humiliate you with this footage" might be risky?

To your final point though I think legally you need to get peoples permission in order to use footage of them.

You're right. Everybody was definitely informed (to my knowledge), but Cohen was always presented as the character being a real person. So revealing the joke in the moment might've gotten them in more hot water.
