Why does Google (gmail) not allow you to sign out?
Or should this not bother me? (I guess I should say, I'm sure there's a way, but it's murky, and has me stumped.)

shareNot from the app. You have to remove the account entirely.
shareAh I see. I don't bother with the app because I use Android thus I need to login to my Google account all the time anyway.
But there should be an option in Settings > Accounts and Backup > Manage Accounts to add and remove emails from your Android device.
