Why do the cars have brakes if they want to go fast

Why can they only make left turns?

Australian here, do they only drive on circle tracks? Or sometimes drive on normal tracks?

The only race I really ever watch is Bathurst. I do enjoy some car racing though, might have to start broadening my horizons.
