All the stories about Maris, that was one of my favorite things of the original run

There is no reason she won't still be mentioned in the show, but making fun of a woman could be regarded very differently from 20 years ago. If she wasn't mentioned at all, I think it could be for that.

Even so, a mention or two won't be the same as Niles reciting a recent adventure of hers nearly episode

Well Maris was just a rework of Norm's wife Vera from Cheers. I wouldn't be surprised if they dust off the gag a third time with a new character.
