Why did the queen even have a child?

And even if she did, why not just poison them so they have no way to usurp her power? Doesn't make sense.

Gisele was her step-daughter, who was to inherit everything upon her marriage, when the queen would lose her position as ruler of everything.

Oops, you meant Edward. I guess it was okay to have a successor; she just didn't want him to take over in her lifetime, which he would upon his marriage. That's why she was preventing him from meeting his true love. Guess there's only one per kingdom.

Narissa was Edward's stepmother not his mother (Giselle mentions this in the movie). I don't think Narissa had any children.

That's what she was trying to do in the beginning of the film, isn't it? Get Edward killed by the giant? She couldn't poison him- everyone in the kingdom would know it was her. She had to have him killed another way. She didn't do it earlier because he didn't have a girlfriend- she figured she had plenty of time to do it later. Then he met Gisele and decided in 15 seconds that he wanted to marry her. The queen panicked and threw her down the well and sent Edward with her assistant to keep an eye on him. Actually, she had a pretty solid plan.

With some expections I think that in the Disney universal that the throne passes through the female line and not the male line (the only exceptions are Prince Charming, Prince Eric, and Prince Edward) so that a step-daughter in law, like a actual step-daughter would be a threat to a step-mother (Quen)'s throne.

The prince was her step-child. A better question would be, what happened to the King?

He's probably dead, and we could maybe assume that Edward wouldn't become king until he married. Which is probably why Nerissa keeps him and Giselle separated.

In pure Cinderella fashion, I assume the King is dead and that means Narissa rules the kingdom until Edward gets married and then he would become king.

They don't go into it at all in the movie, but my belief is that she married Edward's father in order to become queen. When he died (when she killed him?) she inherited his throne, which was to be hers until Edward married. Until he did so, it was probably useful to have him around, so she never felt a need to kill him. This is all speculation, but it fits with her character.

A monarch's spouse NEVER inherits the throne, inheritance goes by right of blood, to a child of the body or closest sibling. The spouses of monarchs can only rule through their children, so if a monarch's spouse wants to take the throne, their best bet is to have a kid, get rid of the spouse, and become regent. And to keep the kid from ever claiming the throne in their own right, keep them ill or incompetent or whatever.

King Edward III of England actually had to kill his mother's lover, to end his mother's regency and take his throne!
