and say the timer only had minutes left before it went off so they ran out of there as soon as they got there, or would the forensics team be able to figure out that they were lying?

No, everything would be destroyed and pulverized located near to the explosion.

That whole scene was comical cartoon "cop disarms bomb" trope parody .
Not a single thing in it would happen in real life .

So i guess going on that level of realism the forensics can discover whatever they like
