The opening title and music (apart from season 1)


You gotta love it. The music , TCs helicopter, the scenery, the woman he is learning how to swim (what episode was that?) , his car and drift launch in it and the shirt, stache and eyebrows. One of the best openings ever.

I never heard the original crappy '70s-sounding theme until MPI was released on DVD in 2004. I started watching the show on a regular basis in 1984 (though I'd seen it occasionally starting in '82), so I missed the original airing of the first few seasons. But starting in '87 or so MPI went into syndication so it was on every weeknight at 7 PM (which meant that you got to see two episodes in a row on Thursday nights; the syndicated rerun at 7 followed by a new episode at 8), and they started from the beginning. However, in the syndication package that my local station aired, they had replaced the original theme music in those early episodes with the much better later theme music.

He was "teaching" her how to snorkel (in reality she was already an expert at it, as Higgins pointed out).

My two favorite openings are from MPI and The Dukes of Hazzard.

I love the Dukes of Hazzard opening as well, kind of weird but sometimes get goosebumps when the General Lee is launched over the lake in the titles. Cheers for the answer to the question above. Only seeing this a year later as somehow must of missed a notification of your response. The Fall Guy intro is pretty good too.
