There's always short clips of the process, but rarely is it more than a minute or two... If you know of something long, please paste it. If you see something short (but amazing), paste that, too.

Ben Affleck and Matt Damon used to host a show called Project Greenlight that documented the making of smaller indie films which was very interesting
They only did about 4 seasons but it was pretty informative
It's available on Amazon
