So they have no idea how many episodes there will be and therefore no idea at what rate to unfold the story? Great.

The whole thing was written and shot last year, so they know how many episodes there are.
It's a mini series with a set # of episodes.

But as far as "at what rate to unfold the story," they already did unfold the existing story. It's in the can. That's all the story anyone knows.
A second season would be all new....drawn up, no doubt, with author Margaret Atwood's consultation as to where the character(s) would go next.
