Why is everyone assuming that the cat has a deep meaning?

It's just a cat, for Christ's sake. It's not meant to hold any particular, deep meaning. All he wants is milk and occasionally be petted.

Perhaps because it's featured in so many scenes. It seems unlikely that the Coen Brothers would've focused so much attention on the cat, unless they intended for the cat to be a pointer to some wider overall significance. Or perhaps you feel that the movie is largely about some guitar-strummin' dude who spends an inordinate amount of time chasing after cats?

So you're in touch with the Coen Bros, you and they go way back and they share all their artistic secrets with you?

Here is why:
When Llewyn is laying on Jim & Jean's couch right before the cat escapes the apartment, he asks: "What's your name again?" To which the cat vocalizes something like "Llewyn" (which, btw, is not a typical cat meowing sound either). There's your answer!
Has anybody else noticed this?

You plebs, the cat is a metaphor of his music career. Its spells itself out when Llewyn leaves her behind in the car.

Do I have to give it to you?

I agree. The cat representing Llewyn itself. The nature of every cats is lazy, being fed, being petted, and selfish.
It represents Llewyn who don't want to make money or get a job out of his comfort zone, being fed by his friends (also place for sleep), wants everyone to admire his solo album, and only think what's best for his interest (the solo album, don't want to join a group, suggest abortion twice for his girls, humiliate other singers, etc). The cat that he leave in the car represents his singging career with his former duo, and the cat that found it's way home is his career that finally found it's home in Gaslight club, and some of his friends finally forgive his bad attitude. IMHO.

"Llewyn is the cat" is an actual line in the movie, too. I think the cat has significant meaning.
