Why would anyone want a holographic no-touch companion in 2049 when...

As we saw in the original Blade Runner, the technology to create fully physical and animated toys was available in 2019. J.F. Sebastian had that little soldier and teddy bear who greeted him at the door of his apartment. By 2049, they could have wedded the JOI AI to the technology that J.F. used for his friends. You would have a physical companion capable of contact.

I don't think a holographic Joi would have been very popular competing with that.

Since WALLACE was able to create another copy of RACHEL with only that copy of the recording where DECKARD gave her the TEST to see if she was a REPLICANT or not, and REPLICANTS also have FALSE MEMORIES placed inside of them (RACHEL also had the MEMORIES of TYRELL'S niece IMPLANTED in her), and ANA is also an EXPERT in being able to PLANT MEMORIES in REPLICANTS, my guess would be ANA could also RESURRECT JOI again.

And the way she could do that is by DOWNLOADING the MEMORIES of K as he lay there dying on the stairs. And then placing his memories into another REPLICANT BODY (like the one's that we saw on DISPLAY in those SEE THROUGH GLASS CASES).

And ANA could probably also bring JOI back to life again as well by using K's MEMORIES of her. And those memories could probably also be placed inside of a REPLICANT BODY as well. Because Ana worked for WALLACE, and her job was IMPLANTING FALSE MEMORIES into the BODIES of REPLICANTS.

In other words, what begins as a NO-TOUCH companion for K in 2049 could probably also end up being a companion that he could touch in the next SEQUEL.

Also try to keep in mind the reason why K had JOI for his companion was because he didn't get along with his own kind (due to the job that he had as a BLADE RUNNER who was hired to kill other REPLICANTS like himself). And those other toys were also very primitive in comparison to the much more sophisticated HOLOGRAPHIC JOI.
