There is a scene in the book where she's sitting on the toilet and thinking about something, it's a long time since I read it so can't quite remember but it has some significance. Why they included it in the film without the relevance though I don't know.

Yes, that would be hard to film. Some things just don't translate. But I am sure we are missing the point and that is it wasn't Sheba sitting on the toilet that was the point of the shot, but Allen using it to show Bar's watching her and the voice over, demonstrating her immense obsession.

I think showing Sheba in the toilet is a POV shot of what Barbara sees. Basically, Barbara is so aroused by Sheba that she is taking a good, long look at Sheba in the most sexually stimulating way possible, which is on the toilet. She knows she can’t touch Sheba since she already objected to it on the “touching arms” scene.
