Isn't pretty enough for what? To experience love? To suffer grief? Or to star in a movie?

First off, you need to remember that beauty is in the eye of the beholder. Yes, it's a cliché, but very true. Whether or not you find somebody 'pretty' is entirely subjective.
Second, the Hollywood idea of 'pretty' or 'beautiful' is so far removed from the real world that it beggars belief. You have clearly been heavily influenced by the fake, plastic mentality that pervades most of western culture - and that's okay. So have I. But you are doubtless no oil painting yourself. Yet, unless you wish to be truly shallow, I'm sure you would allow yourself the experience of love, and all the grief and pain that go along with it, despite not being skinny, airbrushed, and nip-tucked.
Third, most 'chick-flicks' and 'rom-coms' suffer from a lack of verisimilitude. That's okay - they're meant to be escapist. But occasionally one comes along that touches people in some way; rises above the average. Often this is because of outstanding writing, performances, and story. Also because of a willingness to avoid cliché, and take a risk or two. Personally I think 'P.S. I Love You' achieves all of these things, to a greater or lesser degree. It kept me entertained, allowed me to escape from my hum-drum life for a while, and surprised me by being witty, original (somewhat), and unexpected. I was moved by it in several places, and it is a film I will watch again. A lot of that was because of Hilary Swank - who I generally don't much like. I thought that she was prettier in this than I have ever seen her before, yet looked real and believable too. And I thought her performance was honest, underplayed, and interestingly nuanced.
Finally, with regard to Jennifer Garner, I have enjoyed her a lot in 'Alias', and also in '13 Going On 30'. I think she is a moderately attractive actress who shows clear talent, and is very likable. But she's also somewhat bland. As to her looks, to me she looks the spitting image of a young Julia Roberts - someone with far more talent and versatility, but to whom I have never been remotely attracted.
Personally I thought the casting was unexpected but a perfect fit nonetheless.
