I like how they just kind gloss over the fact that Fry had sex with own grandma in "Roswell That Ends Well". They were able to go back to the future without any issues. I would think that going to the past and impregnating your own family member would severely change the future for everyone.

I think that it is mathematically impossible or extremely unlikely to be your own grandfather even with time travel. That's what makes Fry so special and rare with the delta brain waves, I guess - he's impossible!
You can't get any rarer than that.
As I remember everyone has a double set of genes. One set from the father and one set set from the mother. And when that person produces a egg cell or sperm cell the genes are scrambled and mixed up and a single set of genes is formed randomly from both paternal and maternal genes. And in the rare cases hen a sperm cell fertilizes an egg cell and a new life begins the sperm and egg sets of genes unit to form a new double set of genes.
Because an organism has double set of genes, one from the father and one from the mother, and they aren't necessarily identical, his total genome is different from those of his parents.
So Fry got 50 percent of his genes from his father and 50 percent from his mother. That means he got 25 percent of his genes from his mother's mother, 25 percent from his mother's father, 25 percent from his father's mother, and 25 percent from his father's father.
So Fry is genetically 25 percent identical with his paternal grandfather and 75 percent different from his paternal grandfather.
But if Fry is also his own paternal grandfather he has to be 100 percent genetically identical with his paternal grandfather.

So if somebody tries to create a serious and plausible version of someone being their own paternal grandfather via time travel they have a lot of explaining to do.
I don't see how this could be the accidental result of someone accidentally meeting his paternal grandmother and accidentally impregnating her.
Somebody has to have planned it and used a lot of time travel and genetic manipulation on the family of the Fry like character. Possibly they would genetically manipulate the paternal lineage so that somehow they all produce genetically identical sperm instead of sperm with random mixes of paternal and maternal DNA. Thus every male in the Fry like character's paternal line would always give the exact same half of his genes to his children.
I don't know if that is biologically possible but that seems like the absolute minimum of genetic manipulation necessary before sending the time traveler to meet his paternal grandmother.
Well, it is not like anything is impossible in a sci-fi cartoon.
