Strange Italian American wording.

Why did/do Italian characters in The Sopranos say a lot of their native foods without the vowel at the end, like "mozzarel" "antipast" "proshoot", "manigoht", "rigaht" and let's not forget "gabagool" (capicola)! etc.?
