Let's play a game here.
Just noticed this last night. The mummy of Imhotep chased down those who opened the chest and stole the canopic jars where the mummy's organs were kept after mummification. He wanted them back. Since they belonged to him, fair enough..
But earlier we see that after he was captured for killing the Pharaoh, Imhotep was tortured, maimed, wrapped, and stuffed alive into the sarcophagus along with a helping of hungry scarabs. He was alive long enough to scratch out "death is only the beginning" into the cover of the sarcophagus, so he clearly had his original equipment (minus eyes, tongue and whatever else we weren't privy to).
So what was in the canopic jars?
