They should not have deleted this scene. Yes, it looks kinda hokey (although the other effects are not all that amazing either), but there are too many references to this scene at the end of the movie. And it doesn't even last that long. They should've edited it a little more so the creature isn't seen as much.

Two options.
Go with what you said, or cut the references at the end.
No idea how they wound up with a middle option.

Also, they could have reshot the scene or the octopus if it was not good enough for Cindy.
