That is true but then again when Tony goes off on his Mom and says "you only have 3 shit children now", where was the sister? She is strangely absent from the table.

I honestly don't remember the details, but it's perfectly reasonable for a family member to leave the room during pointless arguments. And it makes slightly better cinema with fewer participants.
She wasn't in the scene to begin with, and the scene began with just a silent dinner.
