Sylvester's skating was doubled by Aldarico "Babe" Agamenoni, a former skater with the Loyola Marymount University hockey team. There doesn't seem to be a record of the skaters who doubled for Grant and Young.

shareI actually just rewatched this film last night and took particular note of Grant's double. I really think the B&W film, and the constant motion, did a lot to conceal the details of the double's face. Obviously you know it's not Grant but I never felt like I could get a clear look at who it actually was either.
