How much of Anjelica Huston's success in film can be owed to Jack Nicholson?

Her father was an A-Lister, but didn't she only really become respected after Prizzi's Honor?

He probably helped her get started, helped her get an agent and helped her get some early roles. That would have been all she needed, she's a VERY good actor, and breaking up with him didn't harm her career at all.

Her father actually failed to establish her as an actor, when she was 18 or so he put her in a leading role a film called "A Walk With Love and Death", and the film was lame and she was stiff and terrible. She forswore acting for a long time after that, she modelled and partied, and didn't start acting for real until the 1980s, when her father's career was over.
