What's the appeal?
His humour is awful, he's not motivated, he doesn't earn, and (IMO) he's an average-looking dude ... yet he married a hot, successful woman, knocked up some model-looking chick and scored a date with a coffee shop cutie effortlessly.
I thought the movie really flattered the actor and the character he was playing.
It is hinted several times that Celeste feels she stands higher than other people around her. It is possible that she picked up someone like Jesse because she didn't want any competence, also, weren't they best friends? The more you know a person the less you think about think about stuff that at first look appears superficial.
Veronica seems to have been a hook up that went wrong. They probably didn't start dating until she told Jesse she was pregnant. Also, she wasn't from US, but apparently wanted to stay in the there, so Jesse was the one available to help her. Not to say that they were the only things she saw in him, but that was a factor in the chasing.
The coffee shop cutie didn't seem to know him well. She didn't know how unmotivated she he is or anything of this sort. He's not the funniest guy, but he seems someone cool to be around. He's not Brad Pitt but overall, he's attractive.
Jesse and Celeste knew one another in 10th grade, possible earlier. Not sure she's going to be too concerned with earning power or motivation at that point.
Got to disagree with you on Veronica .. they both seemed to greatly enjoy the initial hook up, enough to get together again after months despite not talking during the interim.
I think you make it seem harder than it is.
You can get by with a lot just using your words. A lot of them don't even have to be true.
Yeah, he's average looking, but you're not considering he ended up with that hottie because they had a (possibly drunken) one-night stand.

Celeste isn't that hot. She's nice looking but not hot. Veronica is gorgeous. She got knocked up. But I think Andy Samberg can be handsome.
