Is there a reason why some Minions have two eyes and others have one eye? Any significance?
shareThe creators didn't want the minions to all look the same, like Oompa Loompas in Charlie and the chocolate factory. They made each minion individually, so they all look different. I think the eyes is just a way to provide some variation.

My guess is, the marketing boys are subliminally tapping into some sort of subconscious fondness for cyclopeans hardwired into people's psyches or something?

Same reason why some humans are short and some are tall, some have blue eyes some have brown eyes. There is genetic diversity within the species.
