i thought it was funny how veronica had that ability as if it was 1880

Well you see pictures of her riding a horse in her apartment, so they establish she is an experienced rider.

i did not notice.

I actually think one of the pictures is her show jumping on a horse which is why she is able to jump over the trees when she is riding in the forest...

Her husband said something on the phone about how their daughter was good as equestrian as her mother, establishing that.
