Saw this movie a few years ago on DVD and I don't remember the subtitles being bad although I may have a different opinion if I understood Spanish.
If something is said that isn't included in the subtitles there may be a number of different reasons why. One is that the word or words are so well known in English or worldwide that there may not be a need to. Spanish words like, Si, No, Gracias, Pronto, and Manana are known to most English speakers even if they do not speak Spanish. Another reason might be that they are using a Proper name like a character's name or a name brand or city name which needs no translation. Another reason could be that a character is repeating a phrase that was just translated a moment ago and the translator expect you to remember the meaning because you just heard it translated. My advice is if something is not being translated, try to listen to what they are saying and see if you can figure it out on your own.
