What was the point in Helena traveling to the fantasy/dream world? Why did it have any relevance to her mum having an operation?

As arbitrariness is usually the weakness of storytelling, as opposed to symbolic purpose, can you see that the Mum's sickness had no symbolic purpose?
shareIt totally did though. She traveled to the "dreamworld" to "magically" save her as the white queen was the dreamworld version of her mum. A very typical trope of fantasies of this type. The Talisman by Steven King (one of my favorite King books) is another very similar story.
