Question: how can she remember that she dreams of him every night if she doesn't remember anything for more than a day?

Dreams are controlled by a completely different part of the Brain. In her case it would be easily possible for her to dream about something that she had no conscious memory of.

Likely she was still keeping a diary/log and drawing/painting pictures.

It could be her brain is getting better, but probably wouldn't get better beyond that, since her daughter is like 2 or 3 and she can't remember her. But also, like someone said, dreams=different brain part.

She knows she keeps seeing this guy in her head everyday but doesn't know why. Her brain is retaining the memories through a different mechanism so she assumes its her dreams.
