I only just realised but wouldn't she have set herself on fire almost straight away. I realise she was supposed to be doing it all casually but still.

It somehow reminds me of a succinct news item written by someone and considered a model of snappy journalism. From memory, it goes something like this:
"After a hard day's work, X came home and while bathing his feet in paraffin, lit a cigarette. He might live."
"Chicken soup - with a *beep* straw."
Her behaviour in that scene is rather unhinged. It's a funny scene, but who knows, being a hitman's assistant has perhaps taken its toll.
There's also an earlier scene where she has two phone calls going on at the same time, on the one call she is a respectable housewife talking about preparing soup, on the other she is ordering ammunition and becoming quite foul-mouthed about a hitch in the process.
"Chicken soup - with a *beep* straw."
She was hilarious, especially when she was "taking down the office."!

Gasoline requires a very specific air-fuel ratio. I used to smoke while filling up and never worried. As has been said, you can put a cigarette out in a bucket of gas. It might ignite if you set it next to a spill of gas but probably not. Open flames are different.
Either way, it's funny.
