AFAIK Fudpuckers are a type of tropic fish which can bite. Or was the reference simply because the name sounds funny?

But it may have originally been "Fudgepucker".
The script writers realized how offensive that was so just took out the "GE" to make it Fudpucker.
Everytime I have watched the movie I figured that is what it was (but it just shows the type of mind I have).

I thought the joke was that he chose a stupid gang name which made Mojo suspicious, and then chose an even stupider name while threatening him to which Mojo says "I think I know some fudpuckers on the other side of town"
