He was trying to convey that he is part animal. But that's hard to do, so he comes across looking the way you said.

But of course it makes no sense that the animal side of him completely disappears for the 95% of the film that aren't the opening and closing scenes, and in that 95% of the film he randomly and without any explanation becomes a fully normal human.

Him "acting more human" after his Lili was taken also seems right, considering he probably never found himself in a situation like before and so now he had to wise up and fight.

Yes, he won the cliff diving Gold medal in the Special Fairytown Olympics. He was so proud of the accomplishment he demonstrated it not once but twice in the film. He's a Special champion indeed.

I heard he was supposed to have more dialogue but Tom Cruise felt he should be "simpler" so he and a script writer worked to remove most of his lines.

I think it was to his advantage. Back was a recluse and didn't need many lines.

He is supposed to be Jack in the Green. The mythical being who is tasked with taking care of the forest.
