It seems like in every adaptation of Oliver Twist, we only see boys living with Fagin (even though he must've taken in girls as Nancy says she thieved for him). Was it more common in those days for boys to be used as thieves rather than girls/

Not especially, Fagin just didn't happen to have any girls in his gang when Oliver arrived

There were no girls in the book, as far as I remember.
