Bogart was a serious threat to their plans. Why didn't they just kill him when they had the chance, not once but twice. When they catch him at the plantation they could have killed him easily. Instead they just talk to him for awhile and then leave him guarded by one person.

Because Greenstreet still had lots of clever dialogue to deliver to Bogart. Killing him wouldn't have been half as much fun. It's a movie, designed for entertainment and asking for a suspension of disbelief.
