Is French Cuisine supposed to be world renowned?
French cuisine is weird. World renowned but very different to the American palette. A lot of cold stuff and weird meats.
shareFrench cuisine is very regional. Each region has taken local resources, created dishes to maximize their flavors, and perfected those dishes for centuries. My favorites are Les Gers region for Cassoulet, and Provence for Bouillabaise. I love crepes from Brittany and flammekuche from the germanic Alsace region.
Anthony Bourdain claimed the best cuisine in the world was from the French Basque region. He did a show that featured all these Michelin 3 star places run by families who have been Basque chefs for generations. The food looked beyond amazing.
