The difference is old Gamora was trying to escape from Thanos so she had no choice than to work with the rest of the guardians which made her eventually fall for Quill.. This new gamora already has the ravegers and doesn't have to worry about Thanos.
Well we also see him force choke other people but it seems he cannot do that easily to other force users since they might be protected by the force or can counter it to some extend and most light saber users also have the force.
Actually the solution to having to travel at light speed to another part of the universe using a theoretical wormhole. Wormholes bends space shortening the distance between 2 points within the universe. This means you don't need to travel at light speed. As for the 18 hours, it could be that in the planet she went to time traveled a lot faster there than on earth.
They said loki escaping in avengers endgame was a plot hole as well until the loki series which btw is the main focus of the next phase of marvel. The forgetting of spiderman was literally the last major act in the movie. Did you want them to spend another 30min explaining? The TVA had been compromised so its operation had been seized, Their leader kang had been killed, That lady who gave them orders went somewhere else, morbius no longer believed in the TVA again. Also why is variant loki a plothole? the multiverse always existed with different timelines and events, It was kang and the TVA who forced the multiverse to follow the same storyline not by magic but by destroying worlds and people not following the storyline he wanted. Its like the real world, we all have to follow some rules or laws, those who break the law are put in jail or executed but it still doesn't completely stop people from committing crimes.

Kang was controlling the multiverse meaning no one had free will except kang, Kang explained to them that by killing him there will be branches in the multiverse but everyone will have free will and that will cause chaos in the multiverse or loki takes over the TVA and still prevent branches in the multiverse meaning no one will have free will, sylvie chose the former, let the multiverse decide its fate, loki chose the latter, control the multiverse.
By your logic most of the mcu were just a big trailer for endgame, heck lotr 1 and 2 was just a huge set of fillers until the ring was dropped into the volcano. They should have skipped right to the volcano part
