Iain didn't throw his dish in the bin simply because it didn't go the way he had planned. Watch that episode again. Diane takes his ice cream out of the freezer to make room for hers (then sets his on the counter). By the time he realized what she had done, his ice cream had melted and was ruined. I think his frustration and reaction was more from a fellow contestants underhanded selfishness that ruined his dish than anything else. I am surprised this was not addressed on the next episode, though clearly it was handled off camera because when they came back for the next episode, they said Diane would not be back to compete because she was ill. Seemed to me like they had to kick her off for what she did but didn't want the negative publicity.
