I am not entirely sure either, but I think he is selling his lunch trays. Not the entire tray to one person, but splitting it up. I think I heard someone ask him if he would have any Tater tots (lol those seems to be coveted there) and he said somebody else bought them already.
I could be completely wrong though, I was multi-tasking while it was on, and I don't think it has been explained very clearly either.
Maybe someone here can help clarify it better for us?

Yup you're right. He's got a monopoly too apparently because no one else sells theirs. However he seems to have forgotten he's not actually an inmate and is getting out in a few weeks. There's literally no reason for him to be doing this other than to look 'cool' on TV which seems to be his MO lately.

Ciarra no doubt, is he even getting cash? I know he needed a box flat because he didn't have room for all his Ramen noodles. He will be set if he gets arrested on his way to the Hotel.

The same jackass who walked around the jail telling everyone that he's a "white collar criminal" his first week in; I'm sure this will end well for his dumb country ass.

Ryan eats food that he buys from the jail store ( soups, candy, chips, honeybuns etc)

He sells the food off his tray for even more store goods.

Once he has a stock pile, inmates come to him and trade when the store in closed or have no money on their account , often giving an item of greater value
