So how exactly did they pull it all off? (Spoilers)

So, when they sent Daniel Craig off to find his dumb brothers who were dealing with the stuck gate, their sister came down and helped them put a bunch of other money into different trash bags which were driven off by the cigarette smoking man in a truck? (Who was he?) Then buried that money at that trash place? How did the phone company let Tatum know when he was able to get the money?

And when he tries to go into her salon and she waves him off, seemingly indicating she doesn't want to talk to him still, that was just to keep the audience tricked into thinking he'd really kept no money? (She had been in on the trick and therefore wasn't actually mad at him.)

He said he hadn't been paying his phone bill, so the fact that it was still working meant the FBI was keeping it connected so they could tap it and listen to his calls. When the phone finally died he figured they had stopped the surveillance on him.

You pretty much have it right. The Tatum character was extremely clever by appearing to give back all the stolen money (the money the brothers took out and put in the truck). This not only made everyone think there was no money, thus sealing lips, but it gave the raceway a way out as well. There was a brief scene where due to the mad rush of cash sales a manager said they would add it up later. So the raceway didn't actually know how much money was stolen. He also had the foresight to predict that the type of bomb used would produce smoke, despite having no apparent knowledge of bombs, and set up the smoker guy to precisely fool the security as shown. The movie doesn't explain what his relationship was (work friend maybe).

As for the phone, he intentionally stopped paying his bill, correctly predicting that the FBI would have the phone company keep it active in order to gather evidence on him (as he would be a natural suspect, being a fired employee). When the FBI ended their investigation after 6 months, they finally turned off the phone, thus letting him know the investigation was over.

I'm not sure what the point of the salon scene was. I think you might be right that it was just to trick the audience.

To have the foresight to predict all this would be incredible genius.... fun writing, but not exactly believable.

Thank you. I enjoyed the movie a lot; it’s very entertaining. I wanted to make sure I got it.

I agree with you; the screenwriter (the identify of whom is another separate mystery) had an amazing robbery plan but I don’t think Channing Tatum’s character could have a thought of it let alone pulled if off. I think Soderbergh’s direction grounds the film in a reality that exists while we’re watching it; we just shouldn’t think about it too much afterwards!

the cash could be added up later,
but it wouldn't match the register receipts or computer-tracked sales,
they made a big deal about how the raceway was so advanced, like a city on its own, yet they'd just figure out the cash being dropped & take it as "well, i guess that's all we made on the busiest day of the year,"
also....tatum's character seemed like an idiot, so did his brother....this heist plan was so far beyond their brain capacity even with all its flaws

not true i think tatums character is smart but always been stuck in a low rent job. the heist is actually quite simple anyways.
