I'm only really interested in the events covered in ACS:TPVOS and beyond. Where should I start with this? Haven't really got the time to delve too deeply into OJs childhood and sport life. Can I skip the first part or two?

I mean if you wanna just get to the trial stuff start at Part 3. You'll find it a lot more rich and informative if you start from Part 1. Very rewarding

I agree not to skip them. Maybe beforehand it seems like you're watching 4 hours of history you don't care about, but it's so very well done, and sets you up well for knowing who OJ was, and what the culture was like at that time.
