So what does Dennis do with the wine?

Dennis (the bearded guy) mentions in the first episode that he sells wine to a restaurant and it shows that he has a big stock of wine. So what's the deal? Does he buy badass wines and then sit on them until they're worth way more and sell them? And isn't he a recovering alcoholic? That's a whole lot of hooch for an alcoholic guy to be owning.
