Are there set rules on what the contestants CAN'T do?

For example,

In the beginning of Chinese restaurant scenario when two people are blindfolded and attached to a wooden Maze on the wall, they kept their blindfolds on, and only took instructions from the third person who could see them.

Would they have been ALLOWED to simply lean down and remove their blindfolds to finish on their own, OR, better yet, simply ripped their posts through the thin wood Maze and become released instantly...
