Why did it need all the teeth?
Remember the "pay the toll" scene? Eddie's power gets stronger by feeding on the life force (flesh,blood) of other people. Collecting teeth is part of that.
The other children (like Sheriff Yolan's daughter) pull out their own teeth and the teeth of other children (Sheriff Yolan's son had a tooth missing and most likely his sister pulled it out of his mouth under Eddie's command) and they "feed" the teeth to Eddie to make him strong enough to manifest himself in our world.
I'm confused as to its overall purpose.
Eddie's original body is dead. The children offer Eddie their teeth so that his power becomes strong enough for him to temporarily enter our world from his own limbo. When his spirit is in our world, it takes the form of the Tooth Child.
From what I gathered from the last episode the skintaker is some kind of demon that twisted Eddie into this tooth monster and makes him collect life force for him to feed on.
shareNo, the skintaker is just a manifestation of the really evil side of Eddie. He's not possessed or anything, he's just got this extreme dark power which shows itself in many ways. The skintaker is one way, the tooth child another.

I guess the only question about that explanation is where did this dark power come from? If Eddie has it and it's inherent, not external, then his twin should have it as well.
Eddie says the Skin Taker is his friend and a part of him...
Mike supposedly has it as well, he can cancel out Eddie at the end by turning off Candle Cove transmissions, he just didn't suffer the same amount of trauma to awaken his ability in the way it did with Eddie.
